ProCook’s Christmas Day prep guide

Christmas Day always feels calmer when the preparation has already been done. A little planning in the days beforehand means less rushing, fewer last-minute surprises and more time to enjoy the moments that matter. Follow our simple timeline and you'll be free to spend less time worrying in the kitchen and more time around the table.

The weeks before

Plan your menu

Decide what you're cooking for every festive meal, from Christmas breakfast to the main event. Knowing exactly what you'll need makes shopping easier and helps avoid unnecessary last-minute trips.

Confirm your guest list

Finalise numbers early and let everyone know the plan. Sharing arrival times and meal details in advance keeps the day running smoothly.

Shop little and often

Buy store cupboard ingredients, drinks and festive treats ahead of time, leaving only fresh ingredients until later. If you're ordering online, book your delivery slot as early as possible.

Get ahead in the kitchen

Many Christmas favourites can be prepared well in advance. Stuffing, gravy, sauces and mince pies all freeze beautifully, leaving you with less to do on the day. Just remember to defrost them and any frozen meat with plenty of time to spare.

Christmas Eve

Tick off the final jobs

Use Christmas Eve to bring everything together. Collect your fresh ingredients, check your tableware and cookware, and make sure every last detail is in place before the celebrations begin.

Prep your vegetables

Prepare as much as you can the day before. Peel and chop vegetables, storing them in airtight containers, and par-boil those that can be finished by roasting, sautéing or steaming on Christmas Day. It's a simple way to save valuable time when the kitchen is at its busiest.

Prepare your roast

Season, stuff or truss your meat if needed, then weigh it and check the cooking time. Tomorrow you'll simply need to preheat the oven and get started.

Set the table

Lay the table, arrange serving dishes and place serving utensils where you'll need them. It's one of those jobs that's far more enjoyable when it's done calmly the night before.

Christmas Day timings guide (for a 2pm sit down)

Christmas Day is for more than cooking. Follow this simple timeline for a relaxed 2pm lunch, with enough time to enjoy a festive tipple, a few nibbles and the company of family and friends.

9.00am – Get everything ready

Take your turkey and any other meat out of the fridge to come up to room temperature. Prepare your roasting tins, transfer vegetables to their cooking pans and preheat the oven so everything is ready to go.

10.00am – The main event begins

Get the turkey into the oven and baste it occasionally as it roasts. Par-boil the potatoes, organise vegetables and sides by cooking time, and group together anything that can be cooked at the same temperature, such as carrots and parsnips.

11.00am – Take a well-earned pause

With the turkey roasting, take a moment to enjoy the company around you. Let family and friends take care of the table, drinks and finishing touches while everything continues to cook.

12pm – The final preparations

Heat the oil for your roast potatoes, then get them into the oven. Once your turkey or roast is cooked, remove it from the oven, cover with foil and wrap in two or three clean tea towels to keep it warm while it rests; it will stay beautifully hot while you finish everything else.

1pm – The feast comes together

While the meat rests, turn your attention to the remaining dishes. Roast vegetables in order of cooking time, and if you're using an air fryer, it's ideal for pigs in blankets and extra roasted vegetables. Reheat or finish your gravy, adding the meat juices for extra flavour, then boil or sauté your vegetables and any remaining sides.

2pm – The moment to gather around the table

Carve the meat last, ask for a helping hand taking the dishes to the table, then take your seat. The hard work is done – now it's time to raise a glass and enjoy Christmas together.
