Italian bean salad

This Italian bean salad is a great healthy option that provides plenty of protein and fibre.

It works wonderfully as a standalone lunch or as a vibrant side dish for a barbecue. Serve alongside burgers, hot dogs, grilled meats, vegetable skewers and more for a delicious spread of tasty food. We love pairing this Italian bean salad with homemade focaccia.

What you'll need...

  • 400g can borlotti beans, rinsed and drained
  • 400g can cannellini beans, rinsed and drained
  • 6 plump tomatoes, deseeded and chopped
  • 1 red onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 garlic clove, crushed
  • 1 red chilli, finely chopped
  • 1 tsp dried oregano
  • Handful fresh parsley, chopped
  • 2 tbsp lemon juice
  • 5 tbsp olive oil

Method

  1. Heat 3 tablespoons of the olive oil in a large saucepan and cook the onion, garlic, celery and red chilli gently over a low heat for 6-8 minutes until softened.

  2. Stir in the oregano and all the beans and heat gently for 5-6 minutes, stirring occasionally.

  3. Stir in the tomatoes and parsley. Remove from the heat and allow to cool.

  4. Whisk the remaining olive oil with the lemon juice and season well. Just before serving, pour over the bean mixture and toss well.
