Pork belly tacos with smashed broad beans

A seasonal British twist on tacos using fresh broad beans instead of avocado and zesty lime-pickled radishes.

Deliciously tender, these pork tacos are super easy to make and perfect for lunch or dinner. Serve with your favourite sides; however, we recommend pairing them with our air fryer corn ribs.

What you'll need...

For the tacos

  • 500g skinless pork belly strips, 1.5cm thick
  • 150g radishes, finely sliced
  • 3 limes, zest and juice
  • 300g broad beans, podded
  • 1 garlic clove, chopped
  • 1 fresh jalapeño, chopped
  • 8 small corn tortillas
  • 4 tbsp soured cream
  • 1 tsp cumin seeds
  • 1 tsp smoked paprika

Method

  1. Mix the lime zest, juice, water, salt, and sugar. Add sliced radishes and set aside to quick-pickle, stirring occasionally.

  2. Boil broad beans for 3 minutes, drain, and refresh in cold water. Crush with garlic, jalapeño, and salt into a coarse paste, then stir in remaining lime juice.

  3. Stir-fry pork slices with cumin seeds and paprika in a hot pan for 10-12 minutes until crispy. Serve in warmed tortillas with soured cream, beans, and radishes.
