Lime and sweet chilli chicken skewers

Sticky, sweet and gently spiced, these chicken skewers bring together tender chicken, charred vegetables and a bright hit of lime.

Brushed with a punchy chilli glaze as they cook, they’re smoky, vibrant and made for sharing straight from the barbecue. Serve alongside burgers, hot dogs, fresh side salads and your favourite dips for a mealtime that's utterly delicious.

What you'll need...

For the skewers

  • 450g chicken thighs, cut into even chunks
  • 2 red peppers, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 orange pepper, cut into chunks
  • 2 small courgettes, cut into chunks
  • 1 large red onion, peeled and cut into chunks
  • Light olive oil

For the sauce

  • 2 tbsp light brown sugar
  • 1 tbsp light soy sauce
  • 1 tbsp fish sauce, optional
  • 2 garlic cloves, grated
  • 1 inch piece of ginger, grated
  • Juice of 1 lime
  • 1 tsp dried chilli flakes, optional
  • Salt and pepper, to taste

Method

  1. Combine all the sauce ingredients in a bowl and mix well.

  2. Thread the chicken and vegetables onto the soaked skewers, alternating as you go. Brush lightly with some of the sauce and place on a tray.

  3. Preheat the barbecue to a medium-high heat and lightly oil the grill. Cook the skewers for 10–15 minutes, turning halfway and brushing with more sauce, until chicken is cooked through with a light char.
