Fondant potatoes​

Golden and crisp on the outside with a soft, buttery centre, these fondant potatoes are cooked gently in stock for extra flavour and tenderness.

Simple to prepare yet impressive, they make a perfect side for everything from roast dinners to seasonal vegetable dishes.

What you'll need...

  • 4 Maris Piper potatoes, peeled and cut into even barrel shapes
  • 150g butter
  • 80ml vegetable stock
  • 2 garlic cloves, lightly crushed
  • A few sprigs of fresh thyme
  • Sea salt flakes
  • Freshly ground black pepper

Method

  1. Melt the butter in a medium frying pan over a medium heat. Add the potatoes and cook for about 5 minutes on each side until golden, turning once and avoiding moving them too much.

  2. Pour in the stock, then add the garlic and thyme. Season with salt and pepper.

  3. Cover with a lid, reduce the heat and simmer gently for 20–25 minutes until the potatoes are tender. This can also be done in the oven at 180°C/160°C fan/gas 4 - ensure you are using an oven-safe pan with a lid on.

  4. Remove the lid and allow the liquid to reduce slightly until the potatoes are glazed and coated in the buttery stock. Serve warm.
