Smoked trout with potato rösti and beetroot cream

Golden potato rösti topped with smoked trout and a vibrant beetroot crème fraîche make an elegant festive canapé.

Crisp on the outside and soft in the middle, they're perfect for preparing ahead and serving with drinks.

What you'll need...

  • 1kg waxy potatoes
  • 2 cooked beetroot (about 90g), roughly chopped
  • 1 lemon, juiced, with the remaining half cut into wedges
  • 4 tbsp olive oil, plus 1 tsp
  • ½ tsp yellow mustard seeds
  • Small handful of dill, fronds picked and stalks finely chopped
  • 50g crème fraîche
  • 100g smoked trout, torn into bite-sized pieces
  • Sea salt flakes, to serve

Method

  1. Put the potatoes in a large pan of salted water. Bring to the boil, then reduce the heat and simmer for 5 minutes until just beginning to soften. Drain, leave to cool, then chill in the fridge for 30 minutes.

  2. Meanwhile, blend the beetroot with the lemon juice, 1 tsp olive oil and a pinch of salt and pepper until smooth. Toast the mustard seeds in a dry frying pan for 1–2 minutes until fragrant.

  3. Once chilled, coarsely grate the potatoes using a box grater, then stir through the chopped dill stalks and toasted mustard seeds.

  1. Heat half the remaining oil in a large non-stick frying pan over a medium heat. Spread half the grated potato mixture evenly across the base of the pan, pressing down gently with a spatula. Cook for 10 minutes until golden and crisp underneath.

  2. Carefully place a large plate over the frying pan, then invert to release the rösti. Slide it back into the pan and cook for a further 8–10 minutes until crisp and golden. Transfer to a board and repeat with the remaining potato mixture and oil.

  3. Cut each rösti into 4–5cm pieces. Top each with a small dollop of crème fraîche and a little beetroot purée, then gently swirl together using the back of a teaspoon. Finish with a piece of smoked trout, a pinch of sea salt flakes and a dill frond. Serve with the lemon wedges alongside.
